AVOCADO TUNA SPRING MIX SALAD
This is the perfect lunch or dinner recipe because it has such a great balance of foods. You get some protein from the tuna, some healthy fats from the avocado, a serving or two of a variety of vegetables and some crunch from the crackers. This recipe hits all the marks of a healthy and balanced meal, and has become such a staple in my diet. In addition, this recipe is gluten and dairy free, as well as having a super minimal ingredient list. I love to prep this ahead of time for my work lunches and it lasts until the end of the week. MY AFTER WORK ROUTINE
Hi everyone! Welcome back to The Dairy Free Diaries! Hope you guys had an amazing week. Today’s blog post is all about what I do after work to keep myself sane from 32-hour work weeks on top of studying for the LSAT. One word- Reflective: I use this word because right about now is the one-year anniversary from when the COVID pandemic started and completely changed the world as we know it. I find myself thinking back to what my life looked like a year ago and I am shocked. This past year has been such a growth period for me, physically and mentally. It feels like that person I used to be just…

Hope you guys are having a great day, week, month, etc. This week’s blog post is so exciting because I am going to share one of my favorite aspects of my wellness journey. That being, dedicating my Sundays to self-care. A TYPICAL SUNDAY IN MY LIFE 6:30am- wake up + drink a glass of lemon water A large glass of iced lemon water is perfect first thing in the morning. On those days where I am so tempted to go right back to bed, I just start chugging my cold lemon water and it wakes me right up. I make sure to prep this the…

FOOD SENSITIVE FRIENDLY SWEETS
Hi everyone! Welcome back to The Dairy Free Diaries! I hope you guys had a great week and are excited for this blog post. I decided to change up this week’s topics to food sensitivities, which I haven’t talked about in a bit. Nonetheless, this is a blog post that those with sensitive stomachs will love. But before, that let’s do a weekly check in. One word- Uncomfortable: This week was uncomfortable but in the best way possible. I felt extremely challenged this week, and when I prevailed, I was proud of myself. In the past, I chose to live a very comfortable life because it was the easiest option.…

MY MORNING ROUTINE
Welcome back to this week’s post on The Dairy Free Diaries! I hope you guys have had an amazing week, but if not that’s okay too. Not every week is going to be great, but as long as you are able to pick yourself back up, that’s all that matters. One word – Energizing: It was pretty weird this week. I had this crazy amount of energy that came out of nowhere. It was so weird how different my energy levels became this week, and honestly, I believe that it was because the morning routine, which I discuss later, finally kicked in. I started adding a lot of positive and…

HOW TO CREATE A GOAL PLAN AND STICK TO IT
Hi everyone. Welcome back to The Dairy Free Diaries. I hope you all have had a great week and if not, don’t stress about it too much because you have a whole new and fresh week ahead of you. As I am writing this blog post and trying to figure out my one-word, low point, and high point for the week I find it a bit harder than usually to pinpoint. This week just seemed sort of average; nothing really great or really bad happened, which is very different from my previous weeks. Nonetheless, I want to remind you that although the big things may seem to be more important,…

MY TOP 2 MOOD BOOSTING SMOOTHIES
Hello everyone 🙂 Welcome back to the Dairy Free Diaries. I am so very excited to bring you this week’s blog post because my goal plan and ability to stick with it has impacted my life intensely. I have transformed and continue to transform into the person I strive to be because of this. But we will get into that. First, I want to share a little bit about my week. One word – Routine: I know this word is so commonly used, but it perfectly describes my week this week. Last week was my first week at my new job and it was a balancing game trying to manage…

CHINESE CHICKEN SALAD WITH A CREAMY PEANUT DRESSING
Hi everyone! Welcome back to The Dairy Free Diaries! I hope you guys had a great week. In today’s post I am sharing my absolute favorite salad recipe, which I will get to in a minute. But first, I just want to check in with you guys and talk about my week. One word – Exhausting: I want to start off by explaining what I mean by “exhausting”. I guess that word sort of has a negative connotation but for me, this perfectly describes my week in a more positive way. From Monday through Thursday, I had to get up at 6am every morning for my new job. Before this…
