This is the perfect lunch or dinner recipe because it has such a great balance of foods. You get some protein from the tuna, some healthy fats from the avocado, a serving or two of a variety of vegetables and some crunch from the crackers.
This recipe hits all the marks of a healthy and balanced meal, and has become such a staple in my diet. In addition, this recipe is gluten and dairy free, as well as having a super minimal ingredient list. I love to prep this ahead of time for my work lunches and it lasts until the end of the week.
Avocado Tuna Spring Mix Salad
Ingredients:
5 oz. of canned tuna
3-4 tbsp avocado mayo
3 medium stalks of celery, chopped
¼ cucumber, chopped
2-4 large handfuls of spring mix
Handful of Simple Mills Almond Flour Crackers, crushed
Instructions:
In a small bowl, add the tuna, avocado mayo, chopped celery, and chopped cucumber. Mix together until well combined.
Place the crackers in a small Ziploc bag and crush into small pieces.
Add the spring mix into a large bowl and top with ½ the tuna mixture and crackers
