ONE PAN VEGGIE, POTATO, AND CHICKEN SAUSAGE DINNER

Hi everyone, welcome back to the Dairy Free Diaries! Hope you all are doing well and are excited for this week’s blog post. I am sharing the easiest and quickest lunch and dinner idea. This one sheet meal pan is such an easy thing to meal prep in bulk for the week or to prep for dinner the same night.
It is so versatile and the ingredients are completely interchangeable. You can switch up the veggies by using bell peppers, brussels sprouts, etc. Or you can change the protein to tofu or chicken breasts. You can substitute whatever you want to, which is why this recipe is so great.
RECIPE TIME!!!
Serves 2
Ingredients
3 Italian style chicken sausages
2 cups of broccoli florets
4 large carrots
4 medium/large sized red potatoes
2 tbsp avocado oil
Salt, pepper, and paprika to taste
Directions
Start by chopping the broccoli florets, carrots, and red potatoes into small bite sized pieces. Then, slice the chicken sausage into small circular pieces.
Place the veggies into a large bowl and add in the avocado oil, salt, pepper, and paprika. Mix until everything is coated evenly.
Line a large sheet pan with foil and place the veggies, potatoes, and chicken sausages on the pan. Spread evenly on the entirety of the sheet pan.
Bake at 350 degrees for 30-45 mins or until the veggies, potatoes, and chicken sausage are slightly browned.
